I’ve made these shredded pork tacos a few times and am always devouring every bite. They’re really delicious, and are a very reasonable reproduction of the sweet Cafe Rio Pork, if you’re familiar with that restaurant.
Pork Loin or Pork Roast
Sauce: 12 oz Coca-Cola Classic (do not use diet or generic)
1 1/2 Cup sugar
2 7oz can Chipotle Chilies in ADOBO Sauce
1 tsp dry ground mustard – heaping
1 tsp minced garlic.
Remove chilies from the can of adobo sauce. Rinse chilies with the coke to get all the sauce. Discard. Also rinse can with coke to get all remaining sauce. Put all ingredients in blender. Blend, pour over pork in crock pot and cook on low for 7-9 hours. After cooking, pull apart with forks into bite size pieces. Leave in sauce while you serve it.
Serve with all the fixings: sour cream, guacamole, shredded mexican cheese, mixed greens in light dressing (olive oil and apple cider vinegar) and corn tortillas (fried).
PS It seems bizarre to add a can of coke, but believe me, it’s goooood.
PPS I threw some leftover pork in a quesadilla yesterday and it was heavenly!
