• Summer Salads: Sauteed Corn and Black Bean Salad

    In week two of my summer salad series I’m sharing this delicious recipe that my mom and I enjoyed so much that we made it and licked the bowl clean two nights in a row last week. It’s a great compliment to any summer bbq and keeps well for leftovers the next day (one thing that is crucial in a salad for me). I found it in a Martha Stewart mag but can’t find the recipe online.

    Sauteed Corn and Black Bean Salad

    Sautee kernels from 3 ears of corn in 2 T of butter until they start to brown slightly in spots. Remove from heat and toss with:
    A can of drained black beans
    1 sliced avocado
    2 T chopped green onions
    Juice of two limes and 
    A handful of roughly chopped cilantro

    Serve chilled

      I've made this lots, love that combo,mm. Today I had the most amazing salad: to my leafy greens, I added strawberries, goat cheese and walnuts, with basic vinaigrette. Try it!!

      That I will try! I just sauteed fresh corn for the first time the other day (and mixed it in polenta) and thought that I must make it into a salad.

      Looks delicious! I am loving the idea of summer salads now that turning on my oven when its 100+ degrees outside is the last thing I want to do!

      I make this salad all the time! Though I usually treat it as dip and put a bunch of torilla chips along the sides. So good!

      Yes and yes!!!My mom makes something similar, but with garlic and tomatoes. We eat it all summer long with tortilla chips as an appetizer.

      this is totally my kind of salad! we always have dry black beans, and now that corn is popping up in stands on street corners i want to make this! (if only i wasn't leaving the country tomorrow).
