• Weekend Roundup

    Wow, what a busy week. I have a big project to tell you about Monday that I’ve been working really hard on, on top of the usual blog holiday campaigns and holiday crafting taking my home by storm. We are headed to Utah for Thanksgiving this week to close on the home we’re selling, and spend time with family up in the mountains. I love to cook, so the days leading up to Thanksgiving are always enjoyable: researching recipes and prepping for the big day with loved ones. Right now I’m on a gluten free diet (which I love- I feel amazing!) and I’d love to hear any gluten free Thanksgiving recipes you love I can test out (I’m concerned most about pie!).

      Hands down the best chocolate chip cookie is from Bake or Brake. I’ve made these a bunch of times and always get raves!

      Love your blog!
      I am also GF – try the Four and Twenty recipe for a salted caramel apple pie – a new twist on something traditional! I LOVE the recipe.
      For the crust, I use Pamela’s mix found and Whole foods or wherever… works just as well for a good crust :-)

      I am gluten-free for the first time this Thanksgiving. I’ve heard rave reviews about making graham cracker style pie crusts with gluten-free ginger snaps (easy to find at Trader Joe’s or Whole Foods). So that is what I am doing :)

      i just made gf thin mints <3 i usually just replace flour in recipes with my favorite gf flours!

        what’s your fav blend? today my friend told me about william sonoma’s gluten free blend that’s supposed to amazing (made by thomas keller of french laundry!). apparently the stuff flies off the shelf

          I think the blend you’re referencing is called Cup 4 Cup. I’ve purchased a few bags of it from Gilt Taste.

          I’ve been gf for about 10 years now, and honestly, I’ve stopped doing pie crust at all. The gf ones are really tricky to roll out as they’re so delicate, and I’m lazy. If you do decide to roll out your own crusts, a great tip is to do it between two sheets of saran or parchment paper. Otherwise, it’s liable to stick to your rolling pin, and it helps you get it to the pan without tearing.

          You can find gf pie crusts already in the pan in the freezer section of stores like Whole Foods or Whole Earth. They’re okay.

          Finally I decided that the crust wasn’t really the important part to me–it’s the filling and topping. (My family has always done crumb-topped apple pies.) I highly recommend doing crisps or crumbles instead of pie.

            good idea. i bought the cup 4 cup flour and will make a crumb topping for my apple pie. yum!
